White Chicken Chili

It's Saturday late night and I just finished half a pack of chocolate wafer stick... probably the wrong thing to do at this time.. but watching Cupcake Wars on the Food Network channel is not really helping.

Today was colder than I anticipated. The weather forecast said it was supposed to be in the mid 40s today but today was actually still in the 30s! Sigh.. when will we start enjoying the warmer days?

I was at the grocery today and decided to make this amazing White Chicken Chili with white beans and mash potatoes topped with some cheddar cheese. Ah-may-zing!! The absolute comfort food.
